When her husband learned of his gluten intolerance early in 2009, Jessica Mindell headed to the kitchen to develop gluten-free alternatives to his favorite foods and snacks. Combining her background in engineering with her love for baking, she set out to create a delicious gluten-free granola, one of his favorite breakfast foods. After months filled with hundreds of ingredient ratios and baking variations, Mindell succeeded in developing a granola recipe that was delicious, combining the perfect balance of sweetness, crunch and yummy flavors from plump dried fruits, toasted nuts or pure chocolate chips. “I was thrilled that my recipe for gluten-free granola was a hit with my husband, particularly because food options can seem so limited when one is trying to adjust to eating a gluten-free diet,” said Mindell. “Support from family and friends, who also loved my granola, gave me the impetus to build a brand around the line. Between 5% and 10% of all Americans suffer from some sort of gluten sensitivity, and about 3 million Americans suffer from celiac disease. Premium ingredients such as gluten-free oats, ground flax, coconut, Vermont maple syrup, honey, cinnamon and sea salt are the central ingredients for the line. Mindell introduced her line to the public in 2009 with three tasty flavors: Almond Cherry, incorporating local Michigan plump dried cherries and a hint of cinnamon; Chocolate Chip, with richly flavored semi-sweet chocolate morsels; and, Vanilla Maple, blending pure Tahitian vanilla extract, brown sugar and Vermont maple syrup.
